Crisp, Tangy and Ready for Anything
This is the slaw I make when the main dish is rich, smoky, or saucy and needs something sharp to push back. Two kinds of cabbage and shredded carrots bring the crunch, rice vinegar and toasted sesame bring the tang, and fresh ginger adds a little bite at the end. It takes some shredding and whisking, then improves while it sits, so you can make it before the main dish is even in the oven.

SERVING SIZE
1 cup
INGREDIENTS
1 lb
Green Cabbage (finely shredded)
1/2 lb
Red Cabbage (finely shredded)
2
Carrots (shredded)
4
Scallions, aka Green Onions (thinly sliced)
1/4 cup
Rice Vinegar
2 Tbsp
Tamari (gluten-free)
1 Tbsp
Fresh Ginger (grated)
1 Tbsp
Honey (or maple syrup)
2 tsp
Sesame Oil
2 Tbsp
Sesame Seeds
INSTRUCTIONS
Toast the sesame seeds in a dry skillet over medium heat for 2 to 3 minutes, stirring often, until light golden and fragrant. Move them to a plate right away so they stop cooking. Or, use toasted sesame seeds.
Whisk together the rice vinegar, tamari, ginger, honey (or alternate sweetener), and sesame oil in a large bowl until the honey dissolves.
Add the green and red cabbages, carrots, and green onions. Toss with tongs for about a minute, until every shred is coated.
Let the slaw rest for 10 to 15 minutes, until the cabbage softens slightly but still crunches.
Toss again and taste. Add a splash of rice vinegar or a little more tamari if it needs it. Sprinkle on the sesame seeds right before serving.
