High Heat & Bright Herbs = Green Beans Worth Fighting Over
High heat changes green beans completely. Instead of soft and sleepy, they become blistered, crisp-tender and a little smoky around the edges. Tossing them with garlicky, herb-packed chimichurri gives them the brightness they need. This is the kind of vegetable side that can keep up with grilled steak, chicken or fish—and may disappear before the main course does.

SERVING SIZE
~ 3/4 cup cooked + 2 Tbsp chimichurri
INGREDIENTS
1 lb
Green Beans
2 Tbsp
Light Olive Oil
1 cup
Fresh Parsley
1/4 cup
Cilantro
2 Tbsp
Fresh Oregano
2 cloves
Garlic
1/2 tsp
Kosher Salt
1/4 tsp
Black Pepper (finely ground)
2 Tbsp
Red Wine Vinegar
1/4 cup
Extra-Virgin Olive Oil
1/4 tsp
Red Pepper Flakes
INSTRUCTIONS
Finely chop the herbs. Add to a bowl with the vinegar, olive oil and crushed red pepper flakes. Stir well to combine. Season to taste with salt and pepper.
Cover and refrigerate the chimichurri for at least 30 minutes, or preferably 1–2 hours, to allow the flavors to develop.
When ready to cook, remove the chimichurri from the refrigerator and let it begin coming toward room temperature while you prepare the beans.
Trim the green beans if necessary.
Heat a large skillet over high heat until very hot.
Toss the green beans with olive oil and salt. Add them to the hot skillet and cook for 7–9 minutes, tossing occasionally, until blistered in spots but still crisp-tender.
Remove the skillet from the heat. Stir the chimichurri well, then spoon it generously over the hot green beans. Toss lightly to coat, leaving a little extra chimichurri for spooning over the top.
Serve immediately, with additional chimichurri at the table if desired.
