Kofta Loves Fresh Herbs and High Heat

Kofta is a great reminder that there's more to ground meat than just burgers and meatballs. Beef and lamb make a juicy, deeply savory base, while parsley, mint and warm spices push the flavor in an entirely different direction. Shaped around skewers and cooked over high heat, the outside chars while the inside stays tender. Serve it with rice, flatbread, a crisp salad or something cool and creamy and you have the kind of dinner that feels built for sharing.
